GOAT CHEESE BALL
1. Start with 8-12oz of goat cheese
2. Then choose your flavor/toppings:
Pear and pecans
Fig and honey
Green onion and herbs
Cranberry and walnut
3. In a medium bowl, stir cheese with one of the following chopped up ingredients:
Pear - Figs - Green onions - Cranberry
4. Roll the cheese mixture into a ball, then roll other ingredient and serve with your favorite crackers!
CARROT CAKE ENERGY BITES
1. Start with:
1 cup of pitted dates,
1/2 cup of rolled oats
1/4 cup of chia seeds;
Pulse in food processor (or by hand) until finely chopped
2. Add:
2 medium finely chopped carrots,
1 tsp cinnamon
1 tsp vanilla extract
Process until all ingredients are fine and turn into a paste
3. Roll into energy balls and enjoy!
BUFFALO-SRIRACHA CAULIFLOWER BITES
1. Start by preheating oven to 450 degrees, then coat a baking sheet with cooking spray
2. Toss 6-8 cups cauliflower florets, 2 tbs EVOO and 1/4 salt in a large bowl
3. Spread on the baking sheet, cook until browned on bottom and softened, about 15 minutes
4. In bowl, combine:
2 tbs hot sauce,
2 tbs sriracha,
1 tbs lemon juice
1 tbs melted butter.
Add cauliflower and toss
5. Return to sheet and bake until hot, about 5-10 minutes more
